Home Made Kaya (Coconut Jam)

We got the recipe online (I would really like to give credits to this person, but unfortunately I don't know who and where to find it because I didn't keep the URL and I wasn't the one who found it).

Nevertheless, here we go:

So we mixed coconut milk (santan), eggs, and sugar and heated it up slowly, constantly stirring like this for almost 2 hours. I was very patient, I managed to stir it for about more than half an hour, and then I gave up and ended up chatting online. Haha.

We added in a WHOLE LOT of pandan leaves + water for the green colour. See, we're so crazy about wanting it to be VERY green, so we added a lot of leaves, a LOT of them.


We tasted those kaya at the sides of the bowl, and it was awesome. We were so fascinated, haha we made everyone in the house taste a bit of it.
After an hour, the mixture was still too smooth and it wasn't going anywhere, so we figured it must be that microwavable bowl. So we poured everything out onto the tray and cook it there instead. When it turned lumpy, we jumped with joy.
So it turned out, VERY green, and VERY lumpy. This was where the blender came into use.

Ta-da:
Result: A very tasty pandan-flavoured kaya.

We bought a loaf of bread just to toast and go with the kaya, even after we had such a filling pan mee meal (we made it on the same evening and started after our dinner). We managed to finish up 400mL of kaya that night itself.


We are that deprived of good food and cooking.

After flattened, we either use a knife to cut (in replacement of the machine), or tear with hands.
The eating part was not as fun as the making, because the noodle turned out to be harder, less springy, and somehow just didn't taste like it.
We made up a few hypothesis/discussion on why the experiment did not turn out right - eg. too much egg, not enough water, etc. And then, we made round 2. It failed just as well, but tasted slightly better than the previous, so we're heading there.

We love them just as much. I had two bowls - with and without soup. The mushroom and minced pork is tasty.The vegetables: yes, we missed that out, simply because we think we couldn't find them in Brissie. Nevertheless we had Chinese cabbages as a substitute. It tasted different, but I like Chinese cabbages :-)

Brisbane Part I: Food We Made

The 2nd day in Brisbane, we made Assam Fish (if I'm not mistaken).

Despite being a little off-taste-which-we-couldn't-figure-out-what, it was delicious! Mmm. We had conversations about trying the star-shaped spice (I forgot what it's called). They claimed it tasted awful, so we were pushing it around for each other to try. When I finally tasted it, and it was tasteless...

Day 3
We made pork chop and lamb chop! Lamb chop for the guys - Gordon and Melvin.

We also made mashed potatoes + mushroom gravy, mixed beans, and baked beans. It was such a filling meal. We had trouble finishing the potatoes and baked beans. Being such a fan of baked beans (I think I was deprived from anti-baked beans during my childhood), I actually said "NO WORRIES, I WILL finish the baked beans up!"

Yes, squint your eyes if you may have to, and notice how much baked beans there were.

That's not it. We also have a heart-shaped chicken fillet, topped with tomatoes, pineapples, and CHEESE. Cheddar:
I couldn't finish all those baked beans.

We also made our own Pandan Kaya, brownies, TIRAMISU(!!! I heart tiramisu), and 'pan' mee.
